Chicken & Bean Soup

Ingredients

    2 32 oz cartons/cans of chicken broth
    2 carrots, sliced
    1 C chopped red onion
    1 red bell pepper, chopped
    1 green bell pepper, chopped
    1 15 oz can black beans
    1 15 oz can red kidney beans
    1 15 oz can garbanzo beans (chick peas)
    1 C frozen corn kernels (or 1 15 oz can)

    1-2 ribs celery, chopped, optional

    12-16 oz precooked chicken
    (cook your own or get a rotisserie chicken
    from your favorite grocery deli)

    12-16 oz jar of salsa of your choice
    or make your own

Hearty And Nutrient Rich! If This Is Too High In Sodium, You Could Cook Your Own Beans Instead Of Using Canned. I Make A Big Pot And Freeze Meal Sized Portions For A Quick And Easy Meal Starter. Serve With A Nice Bread And A Salad.
