Ingredients
- .5 lbs boneless, skinless chicken breasts , salt and pepper to taste
2T olive oil
.5 C diced celery
.25 C diced green peppers
pinch red pepper flakes
.5 C diced onion
2 large garlic cloves - finely diced
1-2 oz pimentos in juice
pinch red pepper flakes
1 T chili powder
1 t cumin
1 can Rotel tomatoes with chilis and juice
1 can reduced fat cream of mushroom soup
1 C shredded cheddar cheese, plus .5 C for topping
salt and pepper to taste
.75 pound whole wheat penne pasta
reduced fat chicken broth for moisture if necessary
Description
I Used Whole Wheat Penne With This Recipe, But Any Pasta That Holds Up To A Thick Sauce Will Be Perfect. For More Protein, Sometimes I Add Up To One Pound Of Chicken Breasts. This Will Not Affect The Flavor Whatsoever. Just Adds More Texture.
