Zucchini Carrot Apple Muffins

Ingredients

    2 cups shredded Carrots
    1 cup shredded Zucchini
    1 med Apple, peeled & diced (approx 1 cup)
    1/2 cup chopped Almonds
    1/4 cup orgainic Raisins
    2 tsp orange zest
    1 cup all-purpose Flour
    1 cup whole grain Flour
    1 cup organic Sugar
    1 Tbsp Cinnamon, ground
    2 tsp Baking Soda
    3/4 Egg substitute (eggbeaters)
    1/2 cup Applesauce, unsweetened
    1/4 cup Extra Light Olive Oil
    1 tsp Vanilla Extract

    Topping:
    1/2 cup Oatmeal, Quick Oats, Store Brand dry
    1 Tbsp Brown Sugar
    1/4 tsp Cinnamon, ground

Description

These Are Moist, Dense Muffins That Are NOT Sugar Or Fat Free...but Are Still On The Healthy Side Of Things.I Baked Them To Take On A Camping Trip & They Were Not Only Delicious First Thing In The Morning, But A Nice Pick-me-up During A Hike~!My 3 & 5yr O
