Tofu & Adzuki Bean Salad With Honey Mustard Dressing

Ingredients

    2 cups romaine lettuce, chopped
    1/2 small (2") onion, sliced thin
    1/2 cup canned azuki beans, rinsed
    (I used Eden with no salt added)
    1/5 block tofu, cubed in 1/2 pieces
    1/2 medium cucumber, chopped
    5 cherry tomatoes, halved
    2 Tbsp. sliced raw almonds
    Dressing
    1 tsp. cider vinegar (preferably raw)
    1 tsp. olive oil
    1/2 tsp. honey (preferably raw)
    1/2 tsp. grey poupon dijon mustard
    1 tsp. teriyaki sauce (i used trader joe's soyaki)
    non-stick cooking spray
    curry powder
    cayenne
