Moussaka

Ingredients

    2 pounds eggplant, sliced 1/4 inch thick
    1/2 cup olive oil, divided use
    2 large tomatoes
    2 large onions, sliced 1/4 inch thick
    1 pound ground lamb or beef
    1/4 teaspoon ground cinnamon
    1/4 teaspoon ground allspice
    2 tablespoons tomato paste
    3 tablespoons chopped fresh parsley
    1/2 cup dry white wine
    Salt and freshly ground pepper
    4 tablespoons butter
    1/2 cup flour
    2 1/2 cups milk
    1/4 teaspoon freshly grated nutmeg
    1/3 cup grated Parmesan or Kefalotiri cheese
    3 tablespoons toasted bread crumbs

Description

A Real Moussaka Is Mildly Spiced, Moist But Not Dripping In Grease, And Encased In A Golden Baked Crust. Serve With A Light Salad For A Complete Meal. For A Variation, Use Zucchini Or Potatoes In Place Of The Eggplant: Still Authentic And Flavorful.
