Pot Pie (vegetable)

Ingredients

    1/2 cup of chopped onion
    1/2 cup of chopped celery
    1/2 cup of red bell peppers
    1/2 cup of chopped mushrooms
    2 cloves of garlic
    1 medium sweet potato cubed
    1 medium white potato cubed
    1 cup of cubed butternut squash
    1/4 teaspoon of ground sage
    1/4 teaspoon of ground thyme
    2 pinches of ground nutmeg (optional)
    2 to 2 1/2 cups of Vegetable stock
    3 tbsp of flour
    1/3 cup of cold water
    1/2 tsp salt
    pepper

    Pot Pie Pastry

    1 cup of flour
    1/4 tsp of baking powder
    1/4 tsp of salt
    4 tbsp of cold margarine
    4-5 tbsp of ice water

    Increase the Pastry ingredients by 50% if using multiple, small dishes.

Description

Peter Really Enjoyed This Especially The Flaky Pastry Topping, This Could Be Adapted To Include Chicken Or Beef. (The Original Recipe Called For Nutmeg But I Did Not Have Any. Add It The Next Time.)
