Ingredients

    4 x 240g pork cutlets
    1 clove garlic, crushed
    1 tsp dried chilli flakes
    1 tsp fennel seeds, crushed
    2 Tbl olive oil
    Sea salt & fresh black pepper
    300g mixed cherry tomatoes, halved
    300g green beans, blanched & sliced lengthways
    200g mixed olives
    1 cup basil leaves
    Balsamic glaze to serve
