Low Cal Cran Carrot Muffins

Ingredients

    1 c. whole wheat flour
    1 1/2 c. all-purpose flour
    1 1/2 tsp. baking powder
    1 tsp. cinnamon
    1/4 tsp. baking soda
    1/4 tsp. salt
    2 egg whites
    6 tsp. sweetener
    1 tsp. lemon extract
    juice of half a lemon
    2 c. shredded zucchini
    1/2 c mandarin oranges, no sugar added, with juice, crushed

    Combine dry ingredients except sweetener. Beat egg whites until frothy. Add sweetener and extract; beat one minute. Stir in zucchini; mix. Add dry ingredients and fruit. Stir just until dry ingredients are moistened.cupcake cups with non-stick stuff. Bake 10-15 minutes at 350 degrees until fork comes clean. 12 servings
