Ingredients

    Curry Sauce
    2 Teaspoons chili oil
    1/4 Cup minced onion
    2 Tablespoons minced garlic
    2 Teaspoons minced ginger
    1 Cup chicken broth
    1/2 Teaspoon ground cumin
    1/2 Teaspoon ground coriander
    1/2 Teaspoon paprika
    1/4 Teaspoon salt
    1/4 Teaspoon ground black pepper
    1/4 Teaspoon ground mace or 1/8 Teaspoon nutmeg
    1/4 Teaspoon turmeric
    1 Cups coconut milk
    2 Cups Coconut Silk (soymilk)
    3 Medium carrots, julienned
    2 Small zucchini, julienned
    1/2 Cup frozen peas
    1 Tablespoon cornstarch, mixed with 1 T water, for thickening

    Peanut Sauce
    1/4 Cup crunchy peanut butter
    2 Tablespoons water
    4 Teaspoons sugar
    1 Tablespoon soy sauce
    1 Teaspoon rice vinegar
    1 Teaspoon lime juice

    Chicken and Shrimp
    2 chicken breast fillets, about 3/4 poung
    16 Large raw shrimp, shelled and deveined

    2 Cups cooked brown rice

    Garnish
    1/2 Cups flaked coconut
    1/2 Teaspoon dried parsley, crumbled
    2 green onions, julienned
