Lentil, Vegetable And Sausage Soup

Ingredients

    Chop 1 cup each celery, onion and 1/2 cup carrots. Saute in 2 tbsp olive oil until onions are clear in large soup pot.

    Slice 2 links of turkey sausage into pieces. Add to vegetable mixture and saute until brown.

    Add cabbage and spices to taste (I usually add a dash of pepper, basil, Italian seasoning, and some red pepper if I want it a little spicy).

    Add 1 cup lentils, 1 14oz can of Italian chopped tomatoes, 1 6oz can of tomato paste.

    Add 4 cubes chicken bouillon and 12 cups of water. Bring to a boil, then simmer for about a 1/2 hour.

This Is A Yummy Little Soup I Throw Together On Cold Winter Nights. It Freezes Very Well, So I Always Make A Huge Batch Like This So I Have A Healthy Soup On Hand.
