- 1 c Onions, chopped
1 Garlic, 1 clove
1 1/2 tbsp Olive Oil
Saute
1 c Eggplant, fresh, cubed
2 tsp basil
1/2 tsp rosemary
3/4 tsp salt
1/2 tsp marjoram
Add to onion mixture, simmer 15-20 minutes
2 c summer squash, sliced
1 1/2 medium red peppers, cut into thin strips
1 c tomatoes, chopped
Add to eggplant mixture, simmer 10 minutes
Serve veggies over noodles
Top with 1/4 c parmesan, grated
* *Macaroni, enriched, 1 cup spiral shaped (remove)
* Parmesan Cheese, grated, .25 cup (remove)
