Sweet Potato Faux Quiche

Ingredients

    1 1/2 cups whole wheat flour
    ½ tsp baking powder
    ½ tsp baking soda
    ½ stick of butter (unsalted)
    2-5 Tbs hot water

    2 large baked sweet potatoes, peeled and cut up.
    1 medium egg
    ½ block of soft tofu
    4 oz. Plain, low fat, yogurt

    1/8 cup of slivered almonds
    1 slices swiss cheese

    Add any spices you like, garlic, ginger, cayenne – be creative – pumpkin pie spices!

    Equipment:
    2 quart baking dish
    Blender or food processor

    Note: the fat content is a little high in this dish due to the use of real butter, almonds and swiss cheese. These can be substituted for less fattening items - the almonds and swiss cheese can be omitted, but some of the protein, B12 and other nutrients will be sacrificed.
