Shepherd's Pie With Bison And Parsnips

Ingredients

    2 large baked potatoes = 2 cups of mashed from inside
    1 Tbp olive oil
    1 medium onion, peeled and chopped
    1 large carrot, peeled and chopped
    1 large celery stalk, chopped
    2 large parsnips, peeled and chopped
    1 lb ground bison
    1 Tbp all purpose flou
    3/4 cup fat free low sodium vegetable broth
    1/2 tsp dried thyme
    1/2 tsp dried rosemary
    Pinch of ground nutmeg
    Salt and pepper to taste

Description

This Shepherd's Pie Is A Version Of The Joy Of Cooking. I Use Bison Because It Is Leaner Than Beef But Has Lots Of Flavor, And It Pairs Well With The Parsnips, Used To Add More Veggies. Best Of All, It's Low In Fat, Less That 15 Grams Per Serving, And
