Brown Basmati Rice Pudding A La Alton Brown

Ingredients

    Original recipe follows. I tripled it and made a couple substitutions. Nutrition info is for recipe using 3 c rice, 3 c skim% milk, 1 can evaporated milk (not nonfat), 1 can coconut milk (not lite.) Didn't set up, so I went back and added 4 eggs and baked it.

    * 1 cup cooked long grain or basmati rice
    * 1 cup whole milk
    * 1/2 cup heavy cream
    * 3/4 cup coconut milk
    * 2 ounces sugar, approximately 1/4 cup
    * 1/4 teaspoon ground cardamom
    (Original recipe called for the following. I left them out, and the nutrition info does not include them).
    * 1 1/2 ounces golden raisins, approximately 1/3 cup
    * 1 1/2 ounces chopped unsalted pistachios, approximately 1/3 cup

Description

Took Me Longer To Cook Than The Recipe Suggested. Probably Partly Due To Increased Volume And Partly Due To My Crappy Stove.
