Smoke's Chili

Ingredients

  • 2 teaspoons vegetable oil, divided
  • 3 1/2 pounds lean, boned chuck roast, cut into 1/2-inch pieces
  • 3 cups chopped green bell pepper
  • 1 1/2 cups chopped onion
  • 1/4 to 1/2 teaspoon crushed red pepper
  • 1 garlic clove, minced
  • 2 tablespoons chili powder
  • 1 1/4 teaspoons ground cumin
  • 1 tablespoon brown sugar
  • 1 1/2 teaspoons dried oregano
  • 1/2 teaspoon salt
  • 1 (28-ounce) can whole tomatoes, undrained and chopped
  • 1 (12-ounce) can tomato paste
  • 1 (12-ounce) bottle beer
  • 2 (15-ounce) cans kidney beans, drained
  • 3/4 cup low-fat sour cream
  • 3/4 cup (3 ounces) shredded reduced-fat Monterey Jack cheese
