  • 1 teaspoon cornstarch
  • 1 teaspoon water
  • 1 tablespoon fresh lime juice
  • Salt, to taste
  • 4 (6-ounce) Arctic char fillets, 1/2 to 1 inch thick, skin on
  • Freshly ground black pepper, to taste
  • 2 tablespoons canola oil
  • 1/4 cup chopped fresh cilantro
