  • Tofu steaks:
  • 1 (12.3-ounce) package reduced-fat firm silken tofu, drained
  • 1/4 cup all-purpose flour
  • 2 tablespoons dry breadcrumbs
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon freshly ground black pepper
  • 1 large egg, lightly beaten
  • 2 teaspoons vegetable oil

  • Ginger sauce:
  • 1/3 cup rice vinegar
  • 1/3 cup sugar
  • 1/2 cup water
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 tablespoon minced peeled fresh ginger

  • Vegetable stir-fry:
  • 1 teaspoon vegetable oil
  • 1 cup yellow bell pepper strips
  • 1 cup snow peas
  • 1/2 cup chopped plum tomato
  • 2 cups cooked angel hair pasta or somen (wheat noodles; about 4 ounces uncooked pasta)
