- 1 large egg, lightly beaten
- 2 teaspoons vegetable oil
Ginger sauce:- 1/3 cup rice vinegar
- 1/3 cup sugar
- 1/2 cup water
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon cornstarch
- 1/4 cup water
- 1 tablespoon minced peeled fresh ginger
Vegetable stir-fry:- 1 teaspoon vegetable oil
- 1 cup yellow bell pepper strips
- 1 cup snow peas
- 1/2 cup chopped plum tomato
- 2 cups cooked angel hair pasta or somen (wheat noodles; about 4 ounces uncooked pasta)
