Ingredients

1/4 cup (50 mL) fresh breadcrumbs 2 tbsp (25 mL) milk 4 portobello mushrooms 1/4 cup (50 mL) diced pancetta or bacon 3 green onions, dark green leaves removed, finely chopped 1/4 cup (50 mL) grated Parmesan cheese 1/2 tsp (2 mL) chopped garlic 1/4 cup (50 mL) chopped watercress leaves 1 tsp (5 mL) chopped fresh tarragon 1 tsp (5 mL) chopped fresh rosemary 2 tbsp (25 mL) chopped Italian parsley 2 tbsp (25 mL) olive oil Salt and freshly ground pepper Toppings: 1/4 cup (50 mL) dried breadcrumbs 1/4 cup (50 mL) grated Parmesan cheese 2 tbsp (25 mL) olive oil

Description

Stuffed Portobello Mushrooms Are A Nice Change From The Regular Variety. Cut In Quarters To Serve. Pancetta Is Unsmoked Italian Cured Bacon. Serve With A Salad As A First Course Instead Of Part Of The Antipasti, If Desired.
