Pizza Salad With Wisconsin Pepato Cheese

Ingredients

2 whole heads garlic
1/4 cup white wine vinegar
1/8 teaspoon salt
1/8 teaspoon white pepper
2 tablespoons olive oil
1 tablespoon chopped fresh parsley
3 tablespoons balsamic vinegar
1 teaspoon chopped fresh thyme
1 clove garlic, minced
4 cups Yukon gold or red potatoes, cut into 1/2 inch cubes
3 cups red onion, sliced into 1/4 inch rings
3 cups zucchini, cut into 1/2 inch cubes
2 cups gourmet salad greens
1 1/2 cups (4 1/2 ounces) grated Wisconsin Asiago cheese Herbed
Pizza Dough (recipe to follow)
1/2 teaspoon black pepper
24 slices tomato (1/8 inch thick each)
4 ounces Proscuitto ham, very thinly sliced
1/2 cup (2 ounces) Wisconsin Pepato cheese, shaved

Herbed Pizza Dough:
1 package dry yeast
3/4 cup warm water (105° F to 110° F)
2 cups flour
1 cup semolina (pasta flour)
1 tablespoon chopped fresh parsley
2 tablespoons olive oil
1 1/2 teaspoons chopped fresh thyme
1 1/2 teaspoons chopped fresh chives
1/2 teaspoon kosher salt
Vegetable cooking spray
3 tablespoons cornmeal
