Wisconsin True-blue Potato Salad

Ingredients

1 1/4 cups sour cream
2 tablespoons minced parsley
2 tablespoons tarragon white wine vinegar*
1/2 teaspoon celery seed
1/2 teaspoon salt
1/8 teaspoon pepper
3/4 cup (about 5 ounces) crumbled blue cheese
4 cups (1 1/2 pounds) cooked red, white, and All Blue potatoes, cubed**
1/2 cup diced celery
1/2 cup sliced green onions
1/2 cup sliced water chestnuts

*You can substitute 2 tablespoons white wine vinegar mixed with 1/8 teaspoon dried tarragon leaves.

**The recipe can also be made with all red or yellow potatoes.
