- 6 pieces lamb loin fillet, about 150g each or 4 larger pieces, trimmed of sinew
- ½ cucumber
- 1 mango
- small bunch coriander , chopped
- small bunch mint , chopped
- 1 tbsp balsamic vinegar
- 1 tbsp sesame oil , a toasted variety has more flavour
- olive oil , for dressing salad
- 6 handfuls salad leaves
