Fruit & nut Christmas pudding loaf

Ingredients

  • 400.0g dried mixed fruits
  • 85.0g glacé cherries
  • 1 Bramley apple , about 175g, grated, plus zest 1 orange and 1 lemon
  • 150.0ml good apple juice
  • 2.0 tbsp brandy
  • 2.0 tbsp Cointreau (or use more brandy)
  • 140.0g butter , plus extra for greasing
  • 100.0g dark muscovado sugar
  • 2 large eggs , beaten
  • 85.0g self-raising flour
  • 100.0g white breadcrumbs
  • 2.0 tbsp golden syrup
  • 2.0 tsp mixed spice
  • 1.0 tsp ground cinnamon
  • ½ tsp salt
  • 25.0g toasted hazelnuts , pecan nuts and blanched almonds, roughly chopped
