Amalfi Style Shrimp


  • 1 lb of raw shrimp, peeled washed deveined and patted dry
  • 1/8 cup of extra virgin olive oil
  • 2/3 cup of very fine dry bread crumbs
  • 2 garlic gloves, finely minced
  • 12-16 leaves of fresh mint, roughly chopped
  • Dash of salt and cracked pepper to taste
  • Lemon wedges to serve
