  • 1 17/50 kg cooking apples peeled cored and minced
  • 672 gm onionspeeledandchopped
  •     grated rind and juice of 2 lemons
  • 336 gm sultanas
  • 112 gm minced walnuts
  • 2 Tbsp. mixed spice
  •     ltsp salt
  • 750 ml malt or possibly cider vinegar
  • 448 gm Demerara sugar
