  • 1 pound peeled shrimp
  • 1 package extra firm tofu
  • 1 pound broccoli or asparagus cut into bite size pieces
  • 1 Tbsp cornstarch
  • 2 tablespoons Shaoxing rice wine or dry sherry
  • 2 tablespoons soy sauce
  • 2 tablespoons peanut or vegetable oil
  • 2 tablespoon fermented black beans, rinsed briefly and drained
  • 1 1/2 tablespoons minced garlic
  • 1 1/2 tablespoons minced ginger
  • 1 tablespoon of brown sugar
  • 1/3 cup low-sodium chicken broth or water
  • 1 small red onion, cut into thin slices (3/4 cup)
  • 1/4 to 1/2 teaspoon freshly ground black pepper (or red pepper flakes)
  • 1 scallion, finely shredded
