Citrus Crusted Cod Recipe

Ingredients

  • 2 x 150 g red-skinned potatoes, cut into wedges and par-boiled
  • 3 Tbsp. Extra virgin olive oil, plus extra for brushing
  • 1 tsp Cajun seasoning
  • 2 x 150 g cod fillets
  • 2 Tbsp. Sun-dry tomato paste
  • 40 gm Fresh white breadcrumbs
  • 1 Tbsp. Minced fresh parsley
  •     Grated rind and juice of 1 lemon
  • 2 x Salad onions
  • 1 x Green chilli
  • 1 sm Bunch fresh coriander
  • 4 x Tomatoes, 3 seeded and finely minced
  • 1 Tbsp. Extra virgin olive oil
  • 1 tsp Red wine vinegar
  •     Salt and pepper
