Chinese Style Paella Recipe

Ingredients

  • 2 x Chicken legs and thighs, excess fat removed, minced into 2-inch pcs, with bone in
  • 2 1/2 c. Long-grain rice
  • 1 Tbsp. Soy sauce
  • 1 tsp Fresh ginger, chopped
  • 2 tsp Rice wine or possibly dry sherry
  • 2 x Cloves garlic, chopped
  • 1 tsp Cornstarch
  • 8 x Chinese dry black mushrooms
  • 1 Tbsp. Vegetable oil
  • 2 med Yellow onions, thinly sliced
  • 1/4 lb Cooked ham, cut into 1-inch cubes
  • 2 x Green onions cut into 1-inch pcs plus 1 Tbsp. chopped green onion healthy pinch of powdered saffron
  • 1 1/2 c. Chicken broth
  • 1/2 lb Fresh halibut, cut into 1-inch cubes
  • 8 x Your favorite type of clams
  • 8 x Mussels, scrubbed clean
  • 12 x Tiger prawns, peeled, deveined,
  •     (12 to 16) rinsed, and sprinkled with a small amount of rice wine or possibly dry sherry
  • 1 whl cooked crab, separated and cracked
  • 3/4 c. Frzn or possibly fresh green peas or possibly
  • 12 x Fresh snow peas
  • 1 tsp Sesame oil
