Asparagus Salad With Walnut Oil Vinaigrette Recipe


  • 1/4 c. white wine vinegar
  • 1 Tbsp. chopped shallot
  • 2 tsp Dijon mustard
  • 3/4 tsp salt
  • 1/2 tsp freshly-grnd black pepper
  • 1/2 c. vegetable oil
  • 1/4 c. walnut oil
  • 2 lb asparagus trimmed, and
  •     steamed till just tender
  • 1/3 c. toasted minced walnuts
  • 1 Tbsp. minced fresh parsley leaves
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
