Tandoori Chicken Recipe

Ingredients

  • 8 chicken thighs (can be regular, skinless, or skinless/boneless)
  • Kosher salt
  • 1/2 cup plus 2 Tbsp plain yogurt
  • 1 Tbsp vegetable oil
  • 1/2 small red onion, chopped
  • 3 cloves garlic smashed
  • 2 inch piece of fresh ginger, peeled and chopped
  • 4 tsp tomato paste
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 2 tsp hot paprika
  • 2 Tbsp fresh cilantro, chopped
  • Cooked Basmati rice (for serving with)
