- 14.5 oz can diced tomatoes in juice, drained (preferably Italian style)
- 1 bay leaf
- 8 oz baby carrots
- 1/2 cup Mediterranean black olives (Nicoise), pitted
- 3 tablespoons chopped fresh parsley
