Couscous Aux Sept Legumes Recipe

Ingredients

  • 6 c. chicken stock or possibly water
  • 6 x carrots (2 1/2 c.) - cut into chunks
  • 3 x onions - quartered
  • 2 x turnips (3 c.) - peeled and quartered
  • 2 stalk celery - sliced
  • 2 stk cinnamon or possibly 1 tsp grnd cinnamon (3 inch sticks)
  • 1/2 tsp grnd cumin, up to 1
  • 1/2 tsp grnd turmeric
  • 1 tsp salt
  •     Pepper
  • 1 x butternut squash or possibly small pumpkin prepared and cut into 2 inch pcs
  • 3 med , sliced (6 c.)
  • 1/2 head green cabbage, shredded (5 c.)
  • 2 c. cooked or possibly canned chickpeas or possibly fava beans
  • 1 Tbsp. minced coriander or possibly parsley
  •     Couscous, (see below)
  • 1 c. chicken stock, warmed, up to 2
