  • 3 lbs Niman Ranch Pork Shoulder, boneless
  • Spice Rub (see below)
  • Ranchero Sauce (see below)
  • Spice rub:
  • 1 tsp smoked paprika
  • 1/2 tsp granulated garlic
  • 1/2 tsp ground cumin
  • 3/4 tsp California Chili powder
  • 1/4 tsp ground cinnamon
  • pinch ground clove
  • 1/4 tsp ground allspice
  • 3 tsp brown sugar
  • 3 tsp Kosher salt or sea salt
  • 1/2 tsp black pepper, ground
  • Ranchero Sauce
  • 6 ounces prepared BBQ Sauce (Chef Whatley prefers Sweet Baby Ray's)
  • 1 tsp canned chipotle chiles, chopped fine
  • 1/2 tsp ground cumin
  • 1 Tbsp yellow onion, fine dice
  • 1 Tbsp olive oil
  • 1 tsp cider vinegar
  • 2 tsp molasses
