Beef Braciole Skewers With Bread And Lemons Recipe

Ingredients

  • 2 1/2 c. fresh bread crumbs
  • 1 c. finely diced provolone cheese
  • 5/8 c. freshly grated parmesan cheese
  • 3 Tbsp. finely minced parsley
  • 3 sm garlic cloves chopped
  • 2 x shallots chopped
  • 2 1/2 tsp finely grated lemon zest
  • 2 1/2 tsp chopped rosemary
  •     kosher salt and freshly grnd pepper
  • 1/3 c. extra-virgin extra virgin olive oil plus 1/2 c. for brushing
  • 3 1/4 lb beef eye of round cut crosswise into 36 slices (1 1/2 ounces each), and pounded into 6-by-4-inch rectangles
  • 3 x lemons halved lengthwise, then thickly sliced crosswise
  • 1 x baguette top and bottom crusts cut off, sliced 1 inch thick
