  • 4 lrg Artichokes, fresh
  • 3/4 c. Sun-dry tomatoes
  • 1 sm Eggplant, peeled & diced
  • 2 c. Vegetable stock
  • 1/4 c. Onion, minced
  • 1 Tbsp. Basil, minced
  • 1 Tbsp. Oregano, minced
  • 2 x Garlic cloves, chopped
  • 1/4 tsp Black pepper
