Pear Tartlets Recipe

Ingredients

  • 1 lrg egg
  • 1/3 c. sugar plus
  • 3 tsp sugar
  • 3 1/2 Tbsp. all-purpose flour
  • 4 Tbsp. unsalted butter
  • 1 x vanilla bean split
  • 1 Tbsp. orange zest
  • 1/4 tsp grnd cardamom
  • 2 pch freshly-grnd black pepper
  • 1/2 lb frzn puff pastry thawed,
  •     but still cool
  • 3 x hard-ripe pears such as Anjou
  • 1 x lemon halved
  • 1/4 c. apricot preserves
  •     Creme fraiche or possibly vanilla ice cream for serving
  •     Mint for garnish
