Eggplant Corn Casserole Recipe

Ingredients

  • 1 med. eggplant
  • 1 stick butter
  • 1 can cream style corn (or possibly corn sliced from cob & 1/4 c. lowfat milk & 1 teaspoon flour)
  • 1 sm. minced onion
  • 1 minced bell pepper
  • 1 c. cracker crumbs
  • 1 egg, beaten
  • 1 sm. jar pimentos, minced
  • 2 1/2 c. grated cheese

Description

Cook Eggplant In Boiling Water For 10 Min, Then Drain. Mash And Add In Butter. Add In The Other Ingredients, Reserving 1 1/2 C. Cheese For Topping. Bake At 350 Degrees For 1 Hour.…
