  • 1 x butternut squash - (1 1/2 lbs) peeled, seeded,
  •     and rough minced
  • 3 Tbsp. extra virgin olive oil
  • 3/4 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 1/4 c. Italian sausage removed from casing
  • 1 c. small-diced onion
  • 1/2 c. small-diced carrot
  • 1/2 c. small-diced celery
  • 1/2 c. small-diced leeks
  • 2 Tbsp. chopped shallots
  • 1 Tbsp. chopped garlic
  • 2 tsp apple cider vinegar
  • 1 1/2 quart chicken stock
  • 2 tsp maple syrup
  • 1 tsp fresh minced sage leaves
