Otak Otak (fish Mousse Grilled On A Banana Leaf) Recipe

Ingredients

  •     Rempah (see below)
  • 1 1/2 lb White fish filets
  • 2 tsp Salt
  • 1 Tbsp. Sugar
  • 1/2 tsp White pepper
  • 1 lrg Egg, lightly beaten
  • 4 x Fresh or possibly frzn Kaffir lime leaves (daun limau perut) *
  • 24 x 6-inch squares of fresh or possibly frzn banana leaf or possibly aluminum foil
  • 24 med Shrimp (about 1/2 lb.), peeled and deveined
  • 8 x Dry red chiles
  • 2 stalk fresh lemongrass or possibly
  • 1 Tbsp. Lemongrass pwdr or possibly
  •     Zest of 1/2 lemon
  • 2 quart Slices fresh galangal or possibly
  • 1 quart Slice dry galangal, soaked in hot water for 30 min
  • 6 can Nuts (buah kera) or possibly macadamia nuts
  • 2 x Shallots
  • 4 x Cloves garlic
  • 1/2 tsp Turmeric
  • 3/4 tsp Grnd coriander seeds
  • 1/2 tsp Shrimp paste or possibly anchovy paste
  • 1 c. Thick coconut lowfat milk
