- 2/3 C water
- 2.5lbs spareribs cut into 1 1/2 inch pieces across the bone, then cut between the bone
- 5 C water
- 3Tbl fish sauce
- 1 1/2 Tbl salt
- 12 Tbl sugar
- 1 C tamarind juice (a hunk of tamarind melted in boiling water)
- 1lb Chinese watercress
