Summer Strawberry-rhubarb Cobbler Recipe

  • 1/3 C margarine, melted & cooled at room temperature
  • 1/8 tsp. salt
  • 1 C flour
  • 1/2 C raw sugar
  • 1/4 C brown sugar
  • 1 tsp. baking powder
  • 3/4 C milk">almond milk or other non-dairy milk
  • Filling
  • 1 lb. of rhubarb, sliced
  • 1 C raw sugar
  • 1 lb. strawberries hulled & halved
  • 2 Tbsp cornstarch
  • 1 tsp fresh lemon juice
  • 1 tsp vanilla extract
