Italian White Bean Soup With Broccoli And Prosciutto Ham Recipe

Ingredients

  • 1 Tbsp. butter
  • 1 Tbsp. extra virgin olive oil
  • 1 med onion sliced thin rings
  • 2 med leeks, white and light green parts washed, and
  •     sliced into rings
  • 2 x celery stalks with leaves sliced
  • 1 tsp minced garlic
  • 3/4 c. dry cannellini (white) beans soaked 6 hrs,
  •     and liquid removed
  •     (or possibly a 28 ounce can of them, liquid removed)
  • 1 x bouquet garni of
  • 1 tsp coriander seeds plus
  • 1/2 tsp peppercorns plus
  •     thyme plus
  •     parsley and
  • 1 x bay leaf tied in cheesecloth
  • 8 c. water
  • 1/2 c. finely-chopped prosciutto ham
  • 4 c. broccoli florets in small bites
  • 1 Tbsp. balsamic vinegar
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Freshly-grated Parmesan cheese for garnish
