Tamarind Braised Pork Recipe

Ingredients

  • 1/4 c. vegetable oil
  • 1 Tbsp. dry shrimp
  • 1 Tbsp. unsalted butter
  • 1/4 c. sliced onion
  • 2 Tbsp. sliced shallots
  • 2 Tbsp. sliced garlic
  • 1 lb boneless pork shoulder or possibly butt cut 1 1/2" pcs
  • 2 c. chicken stock
  •     (or possibly canned chicken broth)
  • 1/2 c. light brown sugar - (packed)
  • 2 Tbsp. tamarind paste
  • 2 tsp soy sauce
  • 1 tsp fish sauce (optional)
  • 1 tsp shrimp paste
  • 3 x fresh red or possibly green jalapeno chilies sliced thinly
  •     Lemon slices for garnish
