- 2 x egg whites lightly beaten
- 3/4 c. canned pumpkin
- 1/4 c. canola oil
- Â Â (or possibly other low saturated fat oil)
- 1/3 c. brown sugar
- 1/3 c. non-fat lowfat milk
- 1/4 c. non-fat plain yogurt
- 1 tsp vanilla extract
- 1/4 c. dry apricots - (abt 6 to 8) minced
- 2 Tbsp. minced walnuts or possibly almonds (optional)
