Lite Pumpkin And Apricot Muffins Recipe

Ingredients

  • 1 3/4 c. all-purpose white flour
  • 1 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1 tsp grnd cinnamon
  • 1/2 tsp grnd ginger
  • 1/2 tsp grnd allspice
  • 1/4 tsp grnd cloves
  • 1 tsp salt
  • 2 x egg whites lightly beaten
  • 3/4 c. canned pumpkin
  • 1/4 c. canola oil
  •     (or possibly other low saturated fat oil)
  • 1/3 c. brown sugar
  • 1/3 c. non-fat lowfat milk
  • 1/4 c. non-fat plain yogurt
  • 1 tsp vanilla extract
  • 1/4 c. dry apricots - (abt 6 to 8) minced
  • 2 Tbsp. minced walnuts or possibly almonds (optional)
