Falafel Sandwiches Recipe

Ingredients

  • 1 c. dry garbanzo beans
  • 2 cloves garlic, chopped
  • 2 T fresh parsley, chopped
  • 1/4 teaspoon cumin
  • 1 T sesame tahini
  • Dash cayenne
  • 2 T lemon juice
  • 1/2 teaspoon salt
  • Fine dry whole wheat bread crumbs, about 1/2 c.
  • 1 to 3 cloves garlic, finely chopped
  • 4 T lemon juice
  • 3 T tahini (or possibly sufficient to make a thick dressing)
  • Healthy pinch each cayenne and cumin
  • 1 sm. cucumber, finely minced
  • 1 med. tomato, peeled, seeded and minced
  • 4 scallions, chopped
  • 2 ounce sprouts">alfalfa or possibly mixed sprouts
  • Plain lowfat yogurt(optional)
  • Whole wheat pita bread
