- 32 med Asparagus spears - (abt 1 1/2 lbs)

- 2 Tbsp. Salt
- 6 Tbsp. Extra-virgin extra virgin olive oil
- 3 slc Baguette or possibly French bread - (1" thick)
- 4 x Garlic cloves thinly sliced
- 1/2 med Red onion finely minced
- 1 Tbsp. Warm paprika
- 1 tsp Sweet paprika
- 2 Tbsp. Sherry vinegar
- 4 x Large eggs - (jumbo)
- Â Â Freshly-grnd black pepper to taste
- 4 Tbsp. Finely-minced parsley for garnish
