Asparagus Cazuelito Recipe

Ingredients

  • 32 med Asparagus spears - (abt 1 1/2 lbs)
  •     (white asparagus is excellent, too)
  • 2 Tbsp. Salt
  • 6 Tbsp. Extra-virgin extra virgin olive oil
  • 3 slc Baguette or possibly French bread - (1" thick)
  • 4 x Garlic cloves thinly sliced
  • 1/2 med Red onion finely minced
  • 1 Tbsp. Warm paprika
  • 1 tsp Sweet paprika
  • 2 Tbsp. Sherry vinegar
  • 4 x Large eggs - (jumbo)
  •     Freshly-grnd black pepper to taste
  • 4 Tbsp. Finely-minced parsley for garnish
