Aubergine And Pasta In Tomato Wine Sauce Recipe

Ingredients

  • 2 c. Dry pasta shells
  • 1/3 c. Water
  • 1/4 c. Vinegar
  • 1 lrg Aubergine == peeled and
  •     Cubed
  • 1 sm Red onion -- minced
  • 1/2 c. Mushrooms -- minced - or possibly
  •     More
  • 1 x Green pepper -- minced
  • 1/2 c. Chives -- minced
  • 2 Tbsp. Garlic -- chopped
  • 1 med Tomato -- minced
  • 10 ounce Tomato sauce
  • 3 Tbsp. Oregano
  • 1/2 tsp Salt -- (or possibly less)
  •     Grnd pepper
  • 1/4 c. Red wine
