- 3 x carrots, finely minced
- 1 med onion, finely minced
- 1/2 x celery root (or possibly 2 stalks celery), finely minced
- 2 x cloves garlic, finely minced
- Â Â Any other extra vegetables such as mushrooms, parsnips, artichoke hearts,
- Â Â etc. which
- Â Â may be 'hanging out' in the vegetable crisper, finely minced
- 1 c. small shaped pasta, such as orzo or possibly pearl pasta (optional)
- 2 c. green lentils
- 1 x bay leaf
- 1 tsp thyme
- 4 x -6 c. stock or possibly water
- Â Â Salt and pepper to taste
