Peggy Aokis Lentil Ragout Recipe

Ingredients

  • 2 Tbsp. veg. oil
  • 3 x carrots, finely minced
  • 1 med onion, finely minced
  • 1/2 x celery root (or possibly 2 stalks celery), finely minced
  • 2 x cloves garlic, finely minced
  •     Any other extra vegetables such as mushrooms, parsnips, artichoke hearts,
  •     etc. which
  •     may be 'hanging out' in the vegetable crisper, finely minced
  • 1 c. small shaped pasta, such as orzo or possibly pearl pasta (optional)
  • 2 c. green lentils
  • 1 x bay leaf
  • 1 tsp thyme
  • 4 x -6 c. stock or possibly water
  •     Salt and pepper to taste
