Pozole Kfar Recipe

Ingredients

  • 1 sm Onion, sliced thin
  • 3 x Cloves garlic, chopped
  • 3 x Country style pork ribs, boneless, minced bitesize
  • 2 c. Clear broth, chicken or possibly pork
  • 4 c. Water
  • 1 x Carrot, diced
  • 1 x Bell pepper, minced
  • 2 x Celery tops, minced with leaves
  • 1 x Bay leaf
  • 2 Tbsp. Parsley, fresh, minced
  • 1 Tbsp. Good chile pwdr, to taste
  • 1 Tbsp. Sweet Hungarian paprika
  • 1 Tbsp. Chipotles en adobo, to taste
  • 1 tsp Fresh grnd black pepper
  • 1/2 tsp White pepper
  • 1/2 tsp Salt, to taste
  • 1/2 tsp Mexican oregano, dry
  • 1/2 tsp Rosemary, dry
  • 1/2 tsp Thyme, dry
  • 1 tsp Cumin, powdered, =or possibly
  • 1/2 tsp Cumin, whole, toasted, crush
  • 1 Tbsp. Worcestershire sauce
  •     x Chiles, as needed
  • 1 lrg Can white hominy, minimum 16 ounce, double is better
  •     x Tortillas, corn or possibly flour
  •     x Lettuce leaves, torn
  •     x Monterey jack cheese, thin sliced
  •     x Radishes, sliced
  •     x Avocados, sliced
