- 1 x Carrot, diced
- 1 x Bell pepper, minced
- 2 x Celery tops, minced with leaves
- 1 x Bay leaf
- 2 Tbsp. Parsley, fresh, minced
- 1 Tbsp. Good chile pwdr, to taste
- 1 Tbsp. Sweet Hungarian paprika
- 1 Tbsp. Chipotles en adobo, to taste
- 1 tsp Fresh grnd black pepper
- 1/2 tsp White pepper
- 1/2 tsp Salt, to taste
- 1/2 tsp Mexican oregano, dry
- 1/2 tsp Rosemary, dry
- 1/2 tsp Thyme, dry
- 1 tsp Cumin, powdered, =or possibly
- 1/2 tsp Cumin, whole, toasted, crush
- 1 Tbsp. Worcestershire sauce

- 1 lrg Can white hominy, minimum 16 ounce, double is better
