Ingredients

  • 5 slc lean bacon minced fine
  • 1 lb boneless pork loin cut 1" pcs
  • 1 lb boneless lamb shoulder cut 1" pcs
  • 1 c. finely-minced onion
  • 1/2 c. finely-minced celery
  • 1 Tbsp. finely-minced garlic
  • 1 c. dry white wine
  • 1 can plum tomatoes - (28 ounce), liquid removed, minced,
  •     reserving 1/2 c. of the juice
  • 1 x duck - (4 lbs) cut 8 pcs
  • 3 c. fine dry bread crumbs - (abt)
  • 2 quart chicken broth
  • 2 quart water
  • 2 lb dry white beans picked over,
  •     soaked in water overnight, and liquid removed
  • 1 piece salt pork - (1/2 lb) simmered in water
  •     to cover for 15 min and liquid removed
  • 1 lb smoked pork sausage, such as kielbasa in 1" pcs
  • 3 x onions halved lengthwise
  • 3 x garlic cloves crushed lightly
  •     and left whole
  • 1 tsp crumbled dry thyme
  • 4 x parsley sprigs plus
  • 3 x celery tops plus
  • 1 x leek, white and pale green part plus
  • 2 x bay leaves tied together in
  •     a cheesecloth bag
