  • 8 x Egg yolks, see note below
  • 1/2 c. Lemon juice
  • 1 1/2 c. Loosely packed basil
  • 2 c. Extra virgin olive oil
  • 2 whl chicken breasts, boneless, skin removed
  • 1/2 c. Black olives, minced
  • 1 x 13 3/4 oz artichoke hearts, liquid removed, minced
  • 1 tsp Fresh tarragon
  • 1/4 tsp Kosher salt
  • 1/4 tsp Pepper
  • 4 x Thin slices baked ham
  • 1/2 c. Sharp cheddar, grated
  • 2 x Thin slices Lorraine swiss cheese
  •     String
  •     Flour
